Just one thing I haven't seen asked (so sorry If I missed it), but what filesystem is in use on the usbdrives ?
Sure. Those FS are as the drives came in the mail form Amazon (ntfs). I don't want to change that as it is a least common denominator in my compute environment. I have to assume that I will re-plug these drives to other machines in the future and need reasonably quick access.

So I guess the solution to mount the two disks to mount points that are inside the smb share is the next best thing.

There is your problem, NTFS has no concept of symlinks, it uses 'reparse points'.
If you want to have any chance of your setup working, I think you are going to have to reformat the drives. Your Windows machines will not care, they only see the data stream, not the actual drives.
