IP Assignment. In all honesty I have set up different things in the last few days and after many factory resets I cannot remember what I did - if I did anything on RPi5 to force the IP assignment. Do you have any idea where I could look for this?
You can tell WHEN you did it by looking at the dates in the files in /etc/NetworkManager/system-connections. You might be able to tell more by looking at the system logs (sudo journalctl | grep NetworkManager) for changed network configuration...may take some time to sleuth out by looking at IP address assignments.

Last note from me on this: Since you have two Pis, you may want to have a look at sdm. sdm makes it really easy to customizing your system with a known configuration (of your choosing of course) before you ever boot it up. Then, when a new release comes out, assuming you've kept up your customization stuff for sdm, moving to the new release is a LOT easier.
