This one (sorry for the Amazon link) states its SAS to SATA as long as the controller supports it https://www.amazon.co.uk/StarTech-com-S ... B000V72AQ4
Ew. The description for that cable is very poorly written. It is for the niche situation of a SAS HBA/backplane which uses separate SATA style connectors. Any SATA controller that does SAS would be a SAS HBA. Intel made some boards which were SATA only until a SAS upgrade plug was inserted but those actually had a SAS HBA onboard with a software lockout.
No matter what way you go - it's going to be messy compared to a traditional case / server build for "home" users - even the HP Gen 10 MicroServer V2 has gone for 4 non-hot plug SATA drive bays.
Yeah. None of the HP Microservers have officially supported hotplug. They become SAS capable if a SAS HBA is fitted but they're missing a SAS backplane for proper hotplug support. The enclosure is just a metal cage with a SFF8087 breakout cable. You can still hotplug drives but its not officially supported. Don't complain if the HBA locks up due to crazy signals during the hotplug operation.

The Gen 10 Microserver Plus would have been much more interesting if it had two PCIe slots. The v2 improves the RAM capacity but its still hobbled by only having a single slot. Pick either a SAS HBA or upgraded Ethernet. Oh well.
